Kumara Soup

Ingredients

  • 25 grams butter

  • 1 large kumara

  • 1 large potato

  • 1 brown onion

  • 1 ½ teaspoons curry powder

  • 2-3 rashers bacon (optional)

  • 3 cups chicken or vegetable stock

  • 1 cup milk

  • Salt

  • Parsley or chives 

  • Sour cream or crème fraiche

  • Crispy bacon or pancetta shards (omitted for a vegetarian soup)

Method

  1. Chop the kumara and potato into 1cm dice

  2. Finely chop the onion

  3. If using the bacon, remove the rind and cut it into small pieces

  4. Using a large pot, melt the butter and add the potato, kumara, onion, curry powder (and bacon if using)

  5. Cook until the onion is clear

  6. Add the stock and bring to the boil

  7. Reduce heat and simmer gently until the vegetables are cooked

  8. Allow to cool slightly

  9. While the soup is simmering, if you’re using the bacon or the pancetta for garnish fry it in a pan until crispy - drain it on paper towels and allow to cool

  10. Blend the soup until smooth

  11. Return the soup to the pot and add the milk

  12. Reheat until almost boiling

  13. Serve garnished with chopped parsley and/or chives, some shards of pancetta and a dollop of sour cream or crème fraîche
