Oat & Ginger Crunch

 

This is a great, spicy, gingery recipe made with a bit of butter and ingredients from the cupboard

Ingredients

Base

  • ¾ cup brown sugar

  • 150 grams butter

  • 2 tablespoons golden syrup

  • ¾ cup coconut

  • 1 ½ cups rolled oats

  • ¾ cup flour

  • 1 ½ teaspoons baking powder

  • 1 ½ teaspoons ground ginger

Ginger Icing

  • 4 tablespoons butter

  • 4 tablespoons golden syrup

  • 2 teaspoons ground ginger

  • 1 cup icing sugar

Method

Base

  1. Preheat oven to 180’C

  2. Line a 20 x 30cm slice tin with baking paper

  3. Combine all the dry ingredients in a large mixing bowl

  4. In a small saucepan melt together the butter, golden syrup and brown sugar and remove from the heat

  5. Pour the pot mixture into the dry ingredients and mix well to combine

  6. Press the mixture into the slice tin

  7. Place in central position in the oven

  8. Bake for 15-20 minutes

  9. Cool completely then ice with ginger icing

Ginger Icing

  1. Sift the icing sugar and ginger together into a small mixing bowl

  2. In a medium sized pot, gently heat the golden syrup and butter together until melted

  3. Remove from the heat

  4. Add the icing sugar mixture by the spoonful, whisking after each addition to it nice and smooth

  5. Pour over the slice and spread evenly with a hot knife

  6. Let the icing set before cutting into pieces
