Peach & Vanilla Crumble Slice

Makes 12-15 pieces

Ingredients

For the slice

  • 1 cup plain flour

  • ½ teaspoon baking powder

  • ½ cup desiccated coconut

  • ½ cup brown sugar

  • 125 grams butter

  • 1 x large can peaches - drained

  • 2 teaspoons cornflour

  • 1 tablespoon sugar

  • 1 teaspoon vanilla bean paste

For the crumble topping

  • ½ cup flour

  • ½ cup brown sugar

  • ½ cup desiccated or thread coconut

  • ½ cup rolled oats

  • 75 grams melted butter

Method

  1. Preheat the oven to 180’C

  2. Line a 20 x 30 cm slice tin with baking paper

  3. In a medium bowl combine flour, baking powder, coconut, sugar, and butter and mix together to form a soft dough

  4. Press the dough into the lined tin and smooth down with the back of a spoon

  5. Put the slice in the preheated oven and bake for 10 minutes

  6. While the slice is cooking, put the peaches, cornflour, sugar and vanilla in a small bowl and mix gently to combine

  7. In a separate bowl mix the crumble ingredients together

  8. Spoon the peach mixture over the par-cooked base

  9. Sprinkle the crumble mixture evenly over the top, gently pressing it down

  10. Continue to bake the slice for a further 20-30 minutes until it is golden

  11. Set aside to cool

  12. Cut into squares or fingers and dust lightly with icing sugar

  13. Keeps several days in the fridge
